Turkey Meatballs w/ Quinoa

Bought a package of ground turkey the other day from Trader Joes and decided to use it to today to make something delicious and nutritious. So since my cousin was over and we weren’t in the mood for hamburgers she helped me make Meatballs. I have made some Quinoa the other day and thought of using it in place of breadcrumbs. They actually came out better than I expected and my entire family enjoyed it. None left. Think I’ll make some more this week. Also, I melted Raw Cheddar Cheese on them after the 30 minutes while I was making the salad. MmMm MmMm

Turkey Meatballs with Quinoa

1 lb. Ground Turkey

1/2 cup cooked Quinoa

1/2 medium onion finely chopped

Sea Salt, Oregano, Lemon/Pepper Seasoning, Pepper

Olive Oil to sprinkle over

Preheat Oven to 425.. mix all the ingredients together. Make into balls, sprinkle with Olive Oil, also cover cookie sheet in Olive Oil, Cook for around 30 minutes, we turned them after 20. I turned off the oven after this.. took them out. Shredded some Raw Cheddar Cheese, place it on top.. Stuck it back in the oven. Made an Arugula and Spinach Salad with Capers and dressing and placed them on top. Done.

Also I’d like to note that I’m not the best cook in the world. So you can most likely change the degrees and time and ingredients to what your comfortable with. I do a lot of googling when it comes to cooking meat 🙂
