My Dads cooking was comfort. One of my favorite things to have him cook was Lentil Soup. The only downside was that he used to always over salt it because he was a heavy smoker. I asked him to start making it without salt adjusted it to my own taste. Below is my take on my Dads Greek Lentil Soup, every ingredient can be adjusted to your liking. I like mine chunky
I cup lentils
2-3 celery stalks
2-3 cloves minced garlic
one or half an onion
tomato sauce or paste
boil the lentils in 2 cups water for about 10 minutes. Drain and set aside.
heat up a pot with olive oil and add garlic, onion, carrots, and celery and heat until onions are translucent. Around 10 minutes
Add the lentils along with preferred seasonings along with 4 cups water. Bring to a boil and then cover and simmer for ten minutes.
Add the tomato and tomato sauce or paste to your liking, cover and heat on low for around 35 minutes.
When ready to eat, add around 1-2 tablespoons for red wine vinegar and enjoy! This part is optional but makes a big difference, especially since mine comes out pretty bland. That’s what happens when you have a sensitive stomach. Have to keep ingredients to a minimum.
